Palais Café

Palais Café is a unique experience at the heart of the Japanese Palais. With a strong commitment to zero waste, the café provides an eco-friendly environment where sustainability is a top priority. Since its inception as a "pop-up" in May 2019, Palais Café has established as a fixture due to its enduring appeal. Our "Zero Waste" philosophy involves producing minimal to no waste by composting organic leftovers and integrating them back into our cycle. The atmosphere is warm and inviting, perfect for locals and travelers alike. Culinary creations mainly stem from regional and seasonal ingredients, often harvested fresh from our garden or nearby wilderness. We aim to illustrate natural cycles and work with permaculture principles. Starting in 2021, partnerships with Rubikon Garden and most recently with Alte Gärtnerei in Pieschen, have allowed us to bring colorful and fresh ingredients directly to your table. With the help of our team, producers, and guests, we have created a space that is as productive as it is sustainable.

Palais Café offers an impressive array of mostly vegetarian, often vegan dishes, with an emphasis on sustainability. Our menu includes homemade spreads, cakes, and jams, as well as herbal teas made from plants we grow ourselves. We pride ourselves on using local and seasonal ingredients, harvested either from our own garden or foraged from the surrounding wilderness. Some of our produce comes from our collaboration with Alte Gärtnerei of Ufer-Projekte e.V., ensuring fresh vegetables and berries are always available. A highlight is our creative use of leftovers: potato peels are turned into delicious chips, and vegetable scraps are used to make broth for soups. Our culinary focus is on healthy, tasty, and most importantly, sustainable dishes, all free from artificial additives.
